Do we ‘filter’ our honey?

People frequently ask if our honey is filtered. Technically our honey is ‘strained’. After extraction, we strain our honey through a stainless steel double sieve that filters out 95% of the excess wax particles and debris that come from the comb during the extraction process. 

Honey extracting is messy ‘bees-ness’ …and STICKY!  Using a double sieve allows us to remove the random bee wing or leg (of the unfortunate bee that might get crushed during harvesting) and the large wax particles, but it does not remove the pollen.  An average pollen size is approximately 25 microns..with the largest being 100 microns. Our top layer sieve filters 1,000 micron coarse particles and then the fine screen below it is a 500 micron filter. 

So yes, we ‘filter’ out all the big stuff you don’t want floating in your honey….but all the health benefits are still fully intact.  The chart below gives you a better visual.
